BREAKFAST OMELETTE WITH ECLIPSE WHEAT

How To Make It
- Melt ½ tablespoon butter in a medium-sized non-stick frying pan over medium heat
- Add peppers, onions to the pan and cook until cooked (approx. 3 – 4 minutes) and set aside
- Beat eggs, milk, and season with paprika, salt and pepper
- Over medium heat, add ½ tablespoon butter to coat the frying pan
- Add the egg, swirling to coat the bottom of the pan
- After approx. 1 minute, use a spatula to gently lift the edges of the omelette, and tilt the pan so any uncooked egg can fill the gap
- Continue cooking until the centre of the omelette is nearly cooked
- Sprinkle the peppers, onions and cheese on top the omelette, and cook until cheese melts
- Fold one half of the omelette over the filling and remove from the pan
- Serve hot with Eclipse Wheat crackers
